Day 2 of the 12 Days of Christmas
On the second day of Christmas…
Here are some examples of how you can “Cook Once, Eat Twice”
Pot Roast first, Beef pie or stew second.
Make a big pot roast with potatoes, carrots, and onions. Use the leftovers to make a beef pie or stew. Place meat and veggies in casserole dish and place a refrigerated or homemade pie crust on top. Bake in oven. Or you can top warmed stew with cooked refrigerated biscuits and put in oven for a couple minutes to heat.
Chicken Parmesan with penne pasta noodles and roasted zucchini first and then Chicken Italian Casserole second.
Make chicken parmesan. Bread chicken breasts with parmesan cheese and breadcrumbs. Pan fry til golden brown. Place in casserole and top with cheese and marinara sauce. Bake until hot and cheese is melted. Serve with penne (or any shaped pasta) and oven roasted zucchini slices.
For the casserole, cut leftover chicken into bite sized pieces. Mix with pasta and zucchini and some shredded mozzarella cheese. Place in foil pan or casserole dish. Serve within 3 days or freeze. When ready to eat, thaw in refrigerator overnight and bake til hot and bubbly.
