Halloween is creeping up, and it’s the perfect time to make some festive family dinners! Last year, I shared 5 Fun Halloween Family Dinner Ideas that added a spooky twist to the usual mealtime. This year, I have a new addition to the list that’s sure to thrill both kids and adults alike: Halloween Shepherd’s Pie Jack-O’-Lantern Stuffed Peppers. These adorable stuffed peppers look like mini Jack-O’-Lanterns and are filled with a hearty shepherd’s pie mixture—perfect for a cozy Halloween night!
Halloween Shepherd’s Pie Stuffed Peppers
Ingredients
- 4 large orange bell peppers
- 1 lb ground eef or turkey
- 1 cup frozen mixed vegetables
- 1 cup beef broth
- 1 TBS tomato paste
- 3 cups prepared mashed potatoes
- Shredded cheese
Instructions
- Preheat oven to 400° F.
- Carefully cut the tops off the bell peppers and remove the seeds and membranes. Use a small knife to carve Jack-O’-Lantern faces into each pepper. These knives are great for this job!
- In a skillet, cook the ground beef or turkey over medium heat until browned. I like to use this tool to help break up the meat. Drain. Stir in the mixed vegetables, beef broth, and tomato paste. Season with salt and pepper,then simmer for 5-7 minutes until the mixture thickens slightly.
- Spoon the meat and vegetable mixture into each pepper,filling them about 3/4 full. Top each pepper with a generous scoop of mashedpotatoes. Sprinkle with cheese if desired.
- Place the peppers in a baking dish and bake for 30-45 minutes, or until the peppers are tender and the mashed potatoes are lightlygolden. Serve warm and watch your family enjoy these spooky Jack-O'-Lantern treats!
